After Anne's post about her Eggplant parmesan the other day, I woke absolutely craving eggplant. Since my day was quite full with work, I opted to fix a quick, easy eggplant dish: Saucy Cheesy Eggplant (a recipe from my Mom of unknown origin). It was divine. The spicy spaghetti sauce & tangy feta, combined with the eggplant, chick peas, black olives along with the crunch of walnuts makes for delight. I froze about 2/3 of it for a later date. I serve it over pasta, with a few slices of fresh crusty bread. it's close to heaven - trust me.
I'd be glad to email you the recipe if you'd like, I hesitate to post it here, since I'm not entirely certain who to credit with this yummy-ness. It's one of my favorite stand-bys. And it cooks up in about 20 minutes, start to finish.(yup, really easy - no fiddling with anything!)
